What you having for dinner

Posted in: Muscatine

1# of hamburger

yellow mustard

chicken and rice soup

can of rootbeer (Shasta ?)

salt/pepper to taste

Brown and drain the hamburger. Add 1 can of Chicken w/rice soup. Mix well.

Squirt of yellow mustard. Salt and pepper to your taste.

Next add half of rootbeer. Reserve other half to enjoy while cooking. Again mix well and allow to simmer and reduce down, it will thicken as it cooks.

Serve on buns or folded over bread slices. Sort of a sloppy joe twist.

A favorite of my Dad's.

That is one delicious sloppy joe type sandwich. Top that with a slice of fresh homegrown Iowa tomato and it is heaven on earth. Our family has made a version of this recipe for years!

I have a really easy delicious breakfast or dessert:

2 ripe peaches, peeled and sliced

1 container of Yoplait Harvest Peach yogurt

Mix and enjoy - very rich tasting but good for you!

P.S. HyVee has peaches on sale right now. I buy and put in a brown paper bag for 2 days to ripen.

Our family has made a variation of the sloppy joe recipe since I was a kid...MANY years ago. We use 1 can of chicken gumbo soup instead of the rice/chicken and put in enough yellow mustard and ketchup so it's kind of a gray color..not yellow from too much mustard and not red from too much ketchup. Never tried the root beer, but I'm going to definitely give that a try.

I love good, simple recipes that don't cost a fortune or take a zillion ingredients to fix.

Kenn I think you'll enjoy it. It's simple to make. Maybe you could shock the wife and you do the cooking one night.  If you need any help just post. As one of the few women that post here I was hoping to get some more women involved, but nothing says a man can't have recipes or doesn't know how to cook.

Thank You.

Before I got the cancer I did a lot of the cooking and I still do on my good days if I have the time or energy. Some days it is hard to keep up on the things that need to be done around the house, plus the woodworking & fishing when I can. That is the way it seems to be but I keep plugging away until the body says that's it.
