**Bolognese sauce (ragł alla bolognese in Italian, also known by its French name sauce bolognaise) is a meat-based sauce for pasta originating in Bologna, Italy. Bolognese sauce is sometimes taken to be a tomato sauce but authentic recipes have only a small amount of tomato.

The people of Bologna traditionally serve their famous ragł with freshly made tagliatelle (tagliatelle alla bolognese) and their traditionally green lasagne. Less traditionally, the sauce is served with maccheroni or other durum wheat short pasta



NOTE:
All meals are served with margarine, 1% low fat milk, and coffee or tea. Suggested contribution is $1.5O but no one will be refused a meal because of inability* to make a contribution.

Our Programs are funded through contract with the New York City Department for the Aging in cooperation with the New York City Housing Authority.

*"Inability to make a contribution" is determined by the Director in private.
